My First Pressure Cooker Meal
Last week my DH (dear husband) got me a new pressure cooker set. I had cooked with pressure cookers a little bit before and I grew up with my Mom cooking with pressure cookers and I really wanted to try using one again. I first asked him if we should get an electric one, but he did some research and decided that stove-top ones were the best and after reading some of the research I agreed with him.
So we ended up getting a Fagor set (see below) that has two sizes of cookers and also has a steam basket for fish and vegetables. I read all the instruction booklets that came with the set and I looked up some recipes online and on the actual Fagor site and I decided to start out with chicken.
It was so easy and the chicken turned out really yummy and so moist, which is very important to me since my weight-loss surgery. I used this Pressure Cooker BBQ recipe from the Key Ingredient site as the basis for my first experiment. (You do have to sign in on the site to get the entire recipe, but I would recommend it because there are some other good recipes on the site.)
Anyway, the new-fangled pressure cookers are so nice - no little jigger, easy to open and close and I wasn't scared once. The reason I stopped using my old pressure cooker was because there was in incident with peas - some of them ended up on the ceiling....
I can't wait to try a black bean recipe I found and I also plan to cook up some quinoa too. Many more adventures in pressure cooking await!
