What I am Eating Right Now - Chia Seeds
I have been working on some new recipes lately but I haven't perfected them enough to share them yet. But I did want to tell you about the latest addition to my pantry. One of my DH's cousins told me about chia seeds. I had read a lot about them, but was skeptical about trying them. She raved about them though, so I decided to take the plunge. I made chia pudding with them - basically you just soak the seeds overnight in the milk of your choice with some flavorings added.
I have been tinkering with her recipe trying to adapt it to my taste. So far I like chocolate flavoring the best and I like adding chopped up strawberries to it when I eat it!
Chia seeds have a LOT of protein. And they help add more fluids to my diet since they swell up about 10x their original size!
