Pumpkin, Pumpkin, Pumpkin
Pumpkin is everywhere - still! I though the winter holiday season would put an end to it, but I am still seeing pumpkin stuff in the stores. No lie - I saw a boxed Pumpkin Cornbread mix at Aldi the other day! Now, I really hate the flavor of pumpkin in most things. No Pumpkin Spice for me (blech), no Pumpkin pie, Pumpkin bread, nothing.
Because of my distaste for the infernal, ubiquitous pumpkin, I almost missed out on a nice treat. I read a recipe - somewhere, I honestly cannot remember - for pumpkin chocolate cake. In the recipe it also said you could use it to make muffins too. So, I made mini muffins. (I wish mine looked as pretty and neat as these, but I am kind of messy, so this is a stock image.)
The recipe is REALLY simple. All you do is take a box of Moist cake mix (any brand) and mix in a can of pumpkin. I add a couple of tablespoons of water to make sure the cake mix is completely moist. Then bake it according to package directions depending on if you are making a cake, regular sized cupcakes or minis.
I use two spoons to drop the batter in and I make 24 mini muffins using 1/2 the batter (or cupcakes if you prefer) and 8 small loaf cakes using the other half of the batter. I bake them for about 18 minutes at 350F or until a toothpick inserted comes out clean.
If you are following Weight Watchers, the muffins are 1 point (on the new SmartPoints plan) and the little loaves are 3 points.
Oh, and by the way - you can't taste the pumpkin!
