Craving Chinese Food?
Since I had weight loss surgery, I have changed the way I eat rather drastically. I still eat a lot of the foods I loved before but things like fried foods and desserts are just not an option. So, I still eat Chinese foods, but egg rolls - no more. And I was craving them recently so I decided to find a way to satisfy my need.
I scanned through several different egg roll recipes and cobbled together a recipe for the filling. Instead of filling wrappers and frying them though, the filling was my meal all by itself. Here's what I came up with:
Unstuffed Egg Rolls
1 cup diced pork loin (or chicken)
1 cup finely diced onion
1 tsp. minced garlic
16 oz. packaged coleslaw mix (the one with carrots)
small can bamboo shoots (5 oz.)
small can minced water chestnuts (5 oz.)
1/8 cup teriyaki marinade
1/4 cup reduced sodium soy sauce
1/4 cup water
1/2 tsp. ground ginger
You will need to use a pan that is large enough to hold all the raw ingredients.
Cook onion and garlic in a non-stick pan until tender (not brown). I added 2 TBSP of water since I was not using oil.
Measure out the teriyaki sauce, soy sauce, water, and ginger into a small bowl - mix together.
Add the pork (or chicken), coleslaw mix, bamboo shoots, water chestnuts, sauce and ginger mixture and mix well.
Cover and steam for 5-10 minutes - depending on how soft you like your cabbage. (I steamed mine for 10 minutes.)
Serve with hot mustard or hot sauce on the side.
Makes about 8 servings.
