Of Quinoa and Candy
I am still raving about my new pressure cooker. The set came with a 4 quart pan and an 8 quart pan. And now I have used both of them. I love quinoa, which is a South American grain if you aren't familiar with it (pronounced "keen-wa"). Unfortunately, I could never cook it very well. I found a recipe for Basic Quinoa on the Fagor America site so I decided to try it, and boy howdy, it was AWESOME. The recipe suggested cooking it for 7 minutes and then checking it, but I like my quinoa very well done, so I cooked it 10 minutes and it was perfectly done for my taste. I have added it to beans, made egg salad with quinoa added, and eaten it with cheese and salsa. I even found a cookie recipe, but I haven't tried it yet.
My next pressure cooker adventure will be navy beans - they are soaking as I type. I can't wait to try them out. I am adapting a recipe I found - I will let you know how the beans turn out. My DH is really happy that I am expanding my culinary skills - he has actually been eating some of my experiments unlike before when he would never touch anything I cooked. He has eaten a lot of peanut butter and jelly sandwiches during this past year.
My other food find this week is Russell Stover Sugar Free Strawberry Cream Candy. I only eat one piece a day and I freeze the candy and it is incredibly tasty - I had been missing a bite of candy since my weightloss surgery. Most sugar free candy is not that great, so I was happy to find this and I usually don't even like strawberry flavored things!
